Rainbow Explosion Cake

When my twins were about to turn 4,

I was determined to bake their birthday cake at home rather then ordering one.

They wanted to participate in the fun!!

When they asked me for a rainbow cake with sprinkles coming out of the cake, the challenge was really on!

I have to say... I was very lucky.

I got it right on my first try!

I made the cake a week before their birthday party and I froze it. YES!!!

You heard me!!! You can freeze it and it tastes as great as if it was baked the same day.

Sooo here we go...


Things you will need:


- 2 round cake pans, size 8 inches round by 2 inches high. You will need to bake 4 cakes for the 4 separate layers.

- 1 cake cutter/leveler

- 1 round cookie cutter around 3 inches

- Disposable cake boards

- A rolling cake stand

- Icing spatula

- Crumb coat spray


Ingredients:


- 4 boxes of Confetti cake mix

- White vanilla frosting

- Blue frosting

- Pink frosting

- Color sprinkles


Instructions:


- Follow the cake box instructions and bake 4 separate cakes.

- Let the cakes cool down. Then turn them over onto a flat surface and use your cake cutter/leveler to cut the top of each cake. What we are trying to achieve, is to have the cakes flat and leveled all the same size.

- Next step you will use your cookie cutter and you need to cut a circle in the middle of each cake... that's where you hide your sprinkle surprise.

- Place your disposable cake board on top of the rolling cake stand.

- Add about 2 Tbsp of white frosting on top of the disposable cake board, and spread it out.

- Place the first cake layer on top of the frosting. This frosting is what's going to hold the first cake layer in place.

- Add your first choice of colorful frosting, "I used pink". Then add the second layer of cake and frosting, "I used blue". Then add the third layer of cake and frosting, "I used white". Now place your last cake layer on top of everything.

- When all 4 layers of cake have been placed with frosting in between, fill the hole in the center of the cakes with the sprinkles.

- Spray your cake with the crumb coat spray and allow it to dry for 5 minutes.

- Using a spatula start to apply the white frosting all over the cake.

- Place sprinkles on a large cookie sheet.

- Place the cake that is on the disposable board onto the cookie sheet that has the sprinkles.

- Using your hands gently add the sprinkles all over the cake, start with the sides and leave the top for last until the entire cake is covered with sprinkles. Then decorate the top as you like using different fun accessories. I got my accessories from etsy.com
