Ingredients
Dough:
- 1 1/2 Cups flour, more for kneading (for gluten free option I use the King Arthur brand you can find on Amazon)
- 1/2 Cup melted butter
- 2 oz Cream cheese
- 1/4 Cup ice water, more if needed
- 1 Tsp sea salt
- 1 Egg yolk for egg wash
Filling:
- 1 Bag fresh spinach cut up
- 1/2 Chopped onion
- 1/2 Tbsp chopped garlic
- 4 Tbsp ricotta cheese
- 5 Tbsp parmesan cheese
- 1 Jar artichoke hearts
- 5 Tbsp olive oil
- Salt and pepper to taste
- Olives to garnish
Instructions
Dough:
- In a bowl add flour, cream cheese, butter and salt. Using a spatula mix all ingredients together, then add the water little by little.
- Lightly flour a clean flat surface and knead dough until it becomes a good consistency (it will be a bit sticky)
- Wrap dough in plastic wrap and refrigerate for 30 minutes.
- Lightly flour a round pizza pan. Using a rolling pin roll out dough to fit the size of the pan.
Filling:
- In a pan heat olive oil and fry the onion and garlic until it is golden.
- Add spinach, artichoke, salt and pepper. Cook until there is no liquid left in the pan.
- Turn off heat then add the ricotta cheese mixing it with a spatula.
Preparation:
- Spread the filling over the dough leaving about 2 inches from the edge.
- Fold the edges of the dough onto the filling.
- Whisk egg yolk and brush it on top of the dough using a pastry brush.
- Garnish with parmesan cheese, olives and olive oil.
- Preheat oven to 350F, bake for 50 minutes.
