Truffle Honey Butternut Squash Soup

Ingredients:


- 2 Medium butternut squash

- 1/2 Onion

- 3 Tbsp honey

- 1 Tsp minced garlic

- Salt and pepper to taste

- 2 Tbsp truffle oil

- 2 Tbsp olive oil

- 2 Tbsp pine nuts

- Crispy onions



Instructions:


- Peel the butternut squash, remove the seeds, and cut in medium size pieces.

- Peel and cut the onion in medium size pieces.

- In a pot, boil the butternut squash with the onion,

salt and pepper until softened.

- Transfer to a blender, the butternut squash and the onion, plus 1 cup of the water that the butternut squash was cooked in... Blend until the mixture is creamy.

- In another pot, fry the garlic in the olive oil, then add the butternut squash mixture. - Cook for 5 more minutes, then add the honey and the truffle oil, and you are ready to serve.

- Garnish with crispy onions and pine nuts.
